Base
  1. Blend all ingredients together in a high powered food processor until a dough like consistency forms.
  2. If mixture isn’t sticking together add a small amount of rice malt syrup until the right consistency is reached.
  3. Press down in a loaf tray until level, flat and compacted.
  4. Place in freezer to set.
Cashew Cream
  1. Blend cashews, coconut milk, rice malt syrup, vanilla essence, maple syrup in a high powered blender.
  2. Blend until a smooth like consistency is formed.
  3. Add the coconut oil and blend further until the entire mixture is completely smooth and creamy.
  4. Once smooth split mixture into three even amounts.
  5. Add the Pink pitaya powder to one, stir through and layer on top of the base, flatten and place back in the freezer to harden before applying next layer.
  6. Take the next mixture and stir through the purple colour until the mixture is evenly coloured. Place aside.
  7. Add the Butterfly Pea Flower powder to the last mixture and stir through until the mixture is even and a bright blue colour.
  8. Once the pink layer has hardened (about half an hour) layer on top the purple layer and place back in the freezer to harden again.
  9. Once the purple layer has set a little, pour the final blue mixture on top, smooth out then set in the freeze for at least 3 hours to allow all layers to completely harden.
  10. Once set, slice and enjoy!
