Raw White Chocolate cupcakes with Unicorn fluff icing

Unicorn foods are all the rage, so here I created the best of both worlds. A double choc raw cupcake that is all vegan, with some fully raw, natural unicorn fluff on top. πŸ™ŒπŸ¦„ The ultimate indulgence of colour and taste.

Instructions
Base
  1. Blend all ingredients together in a food processor until combined and forming a dough like consistency.
  2. Add rice malt syrup to mixture if not sticking together well enough.
  3. Once the desired consistency seperate into 12 equal amounts and press down into silicon muffin trays and place in a freezer to set.
Raw Cheese Layer
  1. Blend all ingredients except coconut oil and cacao butter in a high power blender until well combined.
  2. Add the melted butter and oil to the blender and continue to blend until a smooth texture is achieved.
  3. Seperate the mixture into a 2/3 to 1/3 ration in two bowls. Using the larger mixture evenly pour on top of the choc bases in the muffin trays and return to the freezer.
  4. Then split the remaining mixture into two. Colour one mixture with a mix of the @just_blends butterfly pea flower powder a pinch of Matcha until you get the colour wanted.and
  5. Colour the other mixture with the pink pitaya powder and stir until well combined.
  6. To pipe on top of the cupcakes the same way I did, you will need a Wilton 3 bag piping kit. It enables you to have three seperate bags of icing that come together when you ice it. I used a 1M tip to achieve the effect.
  7. Fill the 3 icing bags, one pink, one blue and one a mixture of the two colours and although to set in the fridge to harden.
  8. After the cupcakes have hardened (about 3 hours in the freezer) remove from moulds and using your hardened piping mixture swirl the icing on top of each cupcake.
  9. Place back in freezer to further set together for another half and hour and then enjoy your unicorn themed creation.
