Raw Choc Mint Slice

Chocolate and mint together has been one of my favourite flavour combinations for a very long time.  Growing up my mum would always have a packet of chocolate biscuits hidden in the veggie draw of our refrigerator, and more often than not it would be Choc Mint slice. Of course as kids we found this secret stash and would quite often help ourselves to a biscuit or two hoping that mother would not notice, which I am sure she did.  These biscuits are an all time Aussie favourite, with a chocolate biscuit base, a creamy mint layer and covered in smooth milk chocolate, so it only seemed natural to try and duplicate these flavours in a raw version.  

Enter these slices, which have been featured on a lot of my morning smoothie bowls recently.  I can not get enough!! With a chocolate coconut crumble base and two smooth cashew cream layers, one chocolate and one mint, coloured with spirulina for the green “mint” look, topped off with a smooth and creamy chocolate layer that oozed down the sounds.  These slices are my favourites at the moment, and with good reason!

Base
  1. Blend all ingredients together in a high powered food processor until a dough like consistency forms.
  2. If mixture isn't sticking together add a small amount of rice malt syrup until the right consistency is reached.
  3. Press down in a loaf tray until level, flat and compacted.
  4. Place in freezer to set.
Cream Layers
  1. Blend cashews, coconut milk, rice malt syrup, vanilla essence in a high powered blender.
  2. Blend until a smooth like consistency is formed.
  3. Add the coconut oil and blend further until the entire mixture is completely smooth and creamy.
  4. Once smooth split mixture into two even amounts.
  5. Stir through the mint essence and spirulina to create the green mint layer.
  6. Pour on top of the set base, level out and place back in the freezer to harden.
  7. Add the melted Cacao Butter to other mixture and stir through the cacao powder, and layer on top of the set mint layer. Place back in the freezer to completely harden for up to 4 hours.
  8. Once hardened, pull out and slice into even slices.
  9. I topped these slices with a raw chocolate after they were sliced, will link the recipe to that below. This is an optional touch, you can also top the slices with some leftover mint mixture or leave them as is once sliced!
