Introducing the delicious Berry Lemon cupcake.  A colourful, zesty cake that is filled with all the good stuff and not lacking on flavour.

After receiving a much anticipated package of freeze dried fruit powders, it was time to experiment with flavours of blueberry, raspberry and lemon.  This zesty, berry delight will not disappoint, smooth, creamy and delicious, while being a guilt free raw dessert.

Berry Lemon Cupcakes
Layers of smooth, creamy berry flavoured cashew cream, with a zesty swirl on top of coconut crumble base. Zingy citrus delight.

Base
  1. Blend all ingredients together in a food processor until combined and forming a dough like consistency. If mixture not sticking together add a small amount of rice malt syrup and blend again until holding together.
  2. Press down in a silicon muffin tray and place in freezer to set.
Raw Cheese Layers
  1. Add Cashews, coconut milk, rice malt syrup, vanilla and maple syrup into a high powered blender and blend for 1 minute until combined.
  2. Add the coconut oil (melted) and blend for a further minute or until mixture is smooth and creamy.
  3. Split the mixture into 3 even amounts.
  4. Flavour one with either 1 tbsp of freeze dried blueberry powder and stir through or 1/2 cup dehydrated blueberries (will have to blend each mixture if using dehydrated fruits).
  5. Flavour another with either 1 tbsp of freeze dried raspberry powder or 1/2 cup dehydrated raspberries. 
  6. For the third mixture stir through the juice of half a lemon and 1/2 tsp Turmeric powder for colouring (optional).
  7. Spoon small amounts alternatively from each flavouring in the cupcake moulds on top of the base until mould is filled.
  8. Taking a toothpick swirl the mixture around in each one to form a pattern and to combine the flavours.
  9. Place back in the freezer for at least 3 hours to set.
