Acai Lemon Raw Slices

Combining two of my absolute favourite flavours in this raw slice heaven.  The zingy, zesty flavours of in season lemon alongside the ultimate in superfoods, the deep, dark purple that is acai.  If you aren’t a massive sweet tooth then this slice is perfect for you, the lemon cuts through the sweetness found in the base of the slice, from dates and balances out the smooth berry taste.  Not only is the slice delicious, but the colours in each layer are all natural, the bright yellow coming from a little added turmeric powder and the purple made richer with some freeze dried blueberry powder (an absolute favourite of mine).  

Being that I am not a massive sweet tooth, this has definitely made its way to the top of my favourites list, the citrus in raw is just too good! You can be sure to see many more citrus creations soon.

Lemon Acai Slice
All raw zesty lemon and berry slice on top of a coconut crumble base.

Instructions
Base
  1. Blend all ingredients together in a high powered food processor until a dough like consistency forms.
  2. If mixture isn't sticking together add a small amount of rice malt syrup until the right consistency is reached.
  3. Press down in a brownie tray until level, flat and compacted.
  4. Place in freezer to set.
Cream Layers
  1. Blend cashews, coconut milk, rice malt syrup, vanilla essence, maple syrup in a high powered blender.
  2. Blend until a smooth like consistency is formed.
  3. Add the coconut oil and blend further until the entire mixture is completely smooth and creamy.
  4. Once smooth split mixture into two even amounts.
  5. Add the lemon juice and turmeric to one mixture and set aside.
  6. Add the acai and blueberry powder to the second mixture.
  7. Layer the acai layer first on top of the base and place back in the freezer to harden.
  8. Once purple layer is solid layer on top the lemon layer, smooth out and place back in the freezer for a further 2 hours to completely set.
  9. Once hard, pull out and slice up evenly. I topped my slices with a little left over acai cream and some slice off cuts.
